We’re not going to win any food photography competitions with this one, but these sandwiches turned out pretty darned delicious so I wanted to share. I was in such a hurry trying to get them done before doing chores last night that at one point I sent my camera flying across the kitchen with the notoriously unreliable 50mm lens attached. It was in for repair twice in the first 12 months I owned it without so much as a light bump so you can imagine my surprise when, upon retrieving said flying camera, I found it to be in mostly working order. I say mostly because while the pictures taken with it afterwards are in focus, they don’t look like it when I’m shooting. Sigh.
Cube up one, approximately one pound chuck steak. Set Aside.
In a small bowl combine tomato paste, worchestershire sauce, teriyaki sauce, and spices. Mix well.
Add steak and mix to coat. Allow to marinate 8+ hours.
Unless you have a FoodSaver with a marinating dish. In which case you can just do this first, and then immediately proceed, as I did. If you don’t have a FoodSaver with a marinating dish, but are really bad at planning ahead — you know, like me — I’d recommend one.
Meanwhile, chop up three or four small onions (or one large one), one green bell pepper, and one red bell pepper. (Or whatever sort of peppers you happen to have on hand.)
Melt a pat of butter in a large skillet and sautee the onions until they begin to brown a bit.
Add peppers and continue to sautee, stirring occasionally, until onions are caramelized and peppers cooked through.
Set aside.
Add chuck steak to pan and cook, stirring occasionally until medium-rare. Set Aside.
Butter eight slices of bread, put slices of your favorite spicy cheese — I used Jalapeno Muenster — on four and then top alternating slices with meat and veggies.
Assemble sandwiches, warm a pat of butter in a large skillet over medium heat, and fry the sammies until golden brown. First on one side…
… and then the other. Enjoy!
